Pork Medallions 5 Spice
1 pound pork tenderloin, trimmed of all visible fat
2 teaspoons five-spice powder
1/4 teaspoon salt
4 teaspoons better butter or trans-fat free spread
3 large granny smith apples, cored and sliced in 1/2″ wedges
1/2 cup dried cranberries
1/2 cup water
Cut the tenderloin in half to create two equal pieces. Rub the spice powder and 1/4 teaspoon salt over all sides of each piece.
In a small skillet, melt 2 teaspoons of the butter or spread over medium-high heat. Add the meat and cook, turning as needed, for about 4 minutes, or until browned on all sides. Cover and continue to cook, turning occasionally, for about 12 minutes, or until a thermometer inserted in the center reaches 155°F and the juices run clear. Remove and let stand for 5 minutes. Cut each piece into 6 medallions.
Meanwhile, in a heavy skillet set over medium-high heat, combine the apples, cranberries, remaining 2 teaspoons butter or spread, water, and the remaining pinch of salt. Cook, shaking the pan occasionally, until the
liquid has almost evaporated and the apples soften. Serve
Five-spice powder is a Chinese seasoning mixture comprised of cinnamon, cloves, fennel seed, star anise, and Szechuan peppercorns. Look for it in the spice section of the supermarket
