There is talk of a minor league baseball stadium being built on the riverfront in downtown Wilmington NC.  There has not been a baseball team in Wilmington NC since the Port City Roosters, a Southern League minor team which was a Double A affiliate of the Seattle Mariners Major Club in 1995.  Read the rest here…

Thai Peanut Noodles

*Flat Belly Diet

1/2 cup peanut butter
1/4 cup water
1 tablespoon honey
3 tablespoons rice vinegar
2 tablespoons reduced-sodium soy sauce
1 teaspoon grated fresh ginger
1 tablespoon sesame oil
1/8 teaspoon crushed red-pepper flakes
8 ounces soba or whole wheat noodles
3 carrots, cut into small matchsticks (about 2 cups)
2 scallions, chopped

Combine the peanut butter, water, honey, vinegar, soy sauce, ginger, oil, and pepper flakes in a small saucepan over medium-high heat. Bring to a boil and cook, stirring constantly, for 1 minute. Set aside.
Bring a pot of water to a boil. Add the noodles and return to a boil. Cook the noodles for 4 minutes, then stir in the carrots. Cook for 2 minutes longer, or until the carrots are crisp-tender. Drain the noodles and carrots and transfer to a large bowl.
Toss the noodles and carrots with the scallions and peanut sauce. Serve immediately.
