Community leaders tackle downtown issues.

The power breakfast meeting Wednesday with community leaders was held to discuss improving Downtown Wilmington NC.  Most everyone was optimistic on the future of Downtown, but not always on the remedies to the existing problems. 

The panel included Wilmington Mayor Bill Saffo, District Attorney Ben David, William Sharbaugh, chief operating officer of PPD Inc., Chris Boney of Cape Fear Future and David Spetrino, chairman of Wilmington Downtown Inc.

The new convention center is now open and Cape Fear Community College is expanding at a great rate.  This has helped revitalize the area.  Saffo says ” that more needs to be done by the private sector.”

Attorney Ben David discussed the crime in the area and what can be done to bring the rates down.  Education of our young people about getting in trouble is high on David’s list of concerns.  The Dreams Center for Arts is one of the educational programs that was touted.  More cultural centers are needed and that is one area that maybe the private sector could start to help the entire downtown cultural feel.

Light Scalloped Potatoes

•    olive oil cooking spray
•    6 red potatoes, in 1/2-inch slices
•    3 tablespoons whole-wheat flour
•    1 1/2 ounces each shredded Gruyere and Parmesan cheeses
•    1/2 teaspoon garlic salt
•    Ground pepper to taste
•    1 small shallot, finely chopped
•    1 cup fat-free milk, warmed
Spray 11″x 7″ baking dish with oil. Line with of the potato; sprinkle one tablespoon of flour, of the cheese, garlic salt, pepper, and of the shallots. Repeat layers. Pour milk on top. Sprinkle with rest of cheese. Bake covered for 25 minutes at 400°F; uncover and bake 20 more minutes, or until potatoes are tender and browned.

Salsa Chicken Stir Fry
•    1 pound boneless, skinless chicken breasts,cut into thin strips
•    1/2 onion, thinly sliced
•    1 clove garlic, minced
•    1/2 red pepper, thinly sliced
•    1 cup broccoli florets
•    1 cup salsa
•    salt
•    ground black pepper
•    1/4 teaspoon ground red pepper (optional)
In a large nonstick skillet over medium heat, cook the chicken, stirring frequently, until it is no longer pink and the juices run clear. Remove the chicken from the pan. In the same pan, cook the onion, garlic, pepper, and broccoli until crisp-tender. Return the chicken to the pan. Add the salsa and stir to coat. Cook for 1 or 2 minutes. Season to taste with salt, pepper, and red pepper, if using. Serve immediately.
