Light Scalloped Potatoes

•    olive oil cooking spray
•    6 red potatoes, in 1/2-inch slices
•    3 tablespoons whole-wheat flour
•    1 1/2 ounces each shredded Gruyere and Parmesan cheeses
•    1/2 teaspoon garlic salt
•    Ground pepper to taste
•    1 small shallot, finely chopped
•    1 cup fat-free milk, warmed
Spray 11″x 7″ baking dish with oil. Line with of the potato; sprinkle one tablespoon of flour, of the cheese, garlic salt, pepper, and of the shallots. Repeat layers. Pour milk on top. Sprinkle with rest of cheese. Bake covered for 25 minutes at 400°F; uncover and bake 20 more minutes, or until potatoes are tender and browned.

    NC Aquarium Behind the Scenes Tour…and More
    The NC Aquarium at Fort Fisher is now offering an Extended Behind the Scenes tour that takes participants deeper into the hidden layers of the Aquarium. The program will feature the traditional behind the scenes tour, which includes exploring animal quarantine, life support, food preparation, and access areas. The tour will then continue to the top of the Aquarium’s largest exhibit, the Cape Fear Shoals, where participants will have the rare opportunity to view a live feeding of the 235,000 gallon tank from a newly created viewing deck. Sharks, stingrays, moray eels, spadefish, and other large fish call the exhibit home and will be swimming below during the tour. The 2 hour tour is for ages 8 and up, children 8 to 14 must be accompanied by a parent or guardian. The fee is $20.00 for ages 13 and up, and $18.00 for ages 8-12. Aquarium admission is included.     Classy-Chassis Car Show & Country Flea Market

    Battleship Arts Fest – A 2nd Saturday Event
    Arts Fest features creations for sale by local artists working in ceramics, metal, wood, and other media. The DREAMS Center for Arts Education, whose focus is offering free-of-charge arts programming to youth, will have young artists selling their work, face painting by donation, entertaining the crowd with African drumming, and offering bottled water and baked goods for sale.     Good News for Wilmington NC Real Estate | Tax Credit and Flood Extension passed by Senate

    Great news for Wilmington NC real estate – The Senate passed the tax credit extension closing date today until September 30 2010, for those buyers currently under contract by the April 30th deadline, but did not get to close by the June 30th deadline, due to a backlog of contracts.  The new extension date is September 30th, 2010.  Those buyers will be able to receive the $8,000 or $6,500 tax stimulus credit

    More good news for Wilmington NC real estate is that the Senate also passed the Federal Flood Insurance program extension until September 30, 2010.  This enables homes in need of flood insurance to be able to get a new policy or renew their policy and be able to be protected.  There have been alot of homes under contract that could not close because this flood insurance program was not extended.  Coldwell Banker Sea Coast Realty and the Wilmington North Carolina area welcomes these extensions.
